Flourless Pumpkin Chocolate Chip Protein Muffins

Ingredients

  • 1 cup natural peanut butter

  • 1 cup pumpkin

  • 1/3 cup maple syrup

  • 1 egg

  • 1 tsp baking soda

  • 1 tsp pumpkin spice

  • 1/4 tsp salt

  • 1 -2 scoop vanilla protein powder

  • 1/2 cup choc chips (+ more for topping)

Directions

  • Preheat oven to 350 degrees.

  • In a bowl, mix all ingredients except chocolate chips.

  • Add in chocolate chips and mix again. Spray the muffin tin with some oil, then use a cookie scooper to add the mixture to the muffin tin.

  • Top with more chocolate chips and bake for 15 minutes.

  • Let cool completely, then remove from muffin tin and store in the fridge or freezer.
